2 eggs – beaten
1/4 cup all purpose flour
2 tbsp grated parmesan
3-4 ramps finely chopped – about 1 cup
Fresh red chili pepper – seeds removed and finely diced. About 1 tbsp.
Pinch of salt
In a bowl, combine eggs, parmesan, ramps, chili pepper, salt. Slowly add flour and whisk to incorporate.
In a pan over medium heat, add a little vegetable oil. When oil is hot add 1 tbsp dollops of batter to pan. Cook for approximately 1-2 minute per side, or until golden brown. Remove and serve with a little sour cream or just by themselves.
