It is that time of year when squash are everywhere. It’s also New York so people who live here are constantly on the move. So can we take some squash and turn them into a quick snack for a hectic lifestyle. Queue up these roasted squash seeds. They take less than an hour to make and are perfect to munch on during the day at work.
Ingredients:
Seeds from 2-4 Delicata squash – washed and any squash pieces removed
Olive oil
Powdered Cumin
Salt and pepper
Serving size: 4
Prep time: 5 minutes
Cook time: 30-40 min

Cumin Roasted Delicata Squash
Directions:
Preheat oven to 250 F degrees.
In a bowl, add Delicata squash seeds and drizzle with a little olive oil. Add a little cumin (just enough so the seeds have a light coat) and salt and pepper to taste. Fold to incorporate all ingredients.
On a baking dish, spread seeds flat. Place in oven and cook for 30-40 minutes or until dry and just starting to brown.
Remove and plate.
