Ostrich Meets Bacon Burger

Not to be outdone by Bareburger (which I really like by the way and highly recommend) and all their burger choices: beef, elk, wild boar, duck, quinoa and more, I put together my own at home Ostrich burger.

There is a local vendor at the green markets around New York who only sells Ostrich so finding the ingredients wasn’t too difficult.  Next up was thick cut bacon, which also isn’t a problem (if possible get the one from the meat counter where they cut it for you and not from the package.)

And like any good burger, that’s really it.  Simple.  Ostrich, bacon, hot grill and a few garden ingredients to finish.

The burger came out great and is a perfect way to introduce your friends to Ostrich.

Serving size: 4
Prep time: 5 minutes
Cook time: 10 minutes

Ingredients:
1 lb. ground ostrich
1/4 lb. thick cut bacon – about 2 strips
Salt and pepper

Directions:

Dice bacon into small pieces.  Add ground ostrich and bacon into a bowl and mix together. Add a little salt and pepper to taste and fold ingredients until evenly distributed.

Form into 1/4 lb. patties.  On a grill over medium heat (or on a grill pan or George Foreman grill) add patties and cook for 3-5 minutes per side.

Remove patties and top with slices of red onion, vine ripened tomatoes and romaine lettuce. Serve on your favorite hearty bread bun (or lettuce if you don’t want to use a bun.)
