By Seth Fera-Schanes

Have your weekend snacking activities become mundane?

Are you in an endless cycle of chips and salsa, string cheese or pita and hummus?

Well, I have the perfect solution for you.  In as little as 10 minutes you can elevate your everyday snack to gourmet proportions! Yes, in the comfort of your own home you can create this award winning snack that will satisfy even the most discerning of palates.

I would like to introduce you to a three ingredient recipe that will change how you view snacks forever.  We take a smoky-sweet mussel and pair it with tangy chevre (goat cheese) which is complemented with a crisp thin cracker.

Smoked Mussels with Fresh Chevre

Smoked Mussels Snack

Serving size: 4-6
Prep time: 10 minutes
Cook time: 0
Ingredients:
6 oz. smoked mussels (I prefer the ones in the plastic container that are located by the fish department as opposed to canned.)  4 oz. goat cheese
Thin crackers

Directions:
Add about 1 tsp goat cheese per cracker.  Try and find speciality (artisanal) crackers for this dish.  Top with one smoked mussel per cracker.
If you have access to fresh ingredients, space and time, you can make your own smoked mussels.
